In my suburban non-work life in Ladner, I have a very close place. It has been open since 2000 at Mt. Fuji is a sushi restaurant. Mt. Fuji is run by a lovely local couple, Michael and Tiffany Hwu, who split the duties of sushi chef (Michael) and front of house (Tiffany). A small staff of cooks and servers, the latter mostly recruited from the local high school.
There is a bit of a joke when we find out that a new restaurant is coming to South Delta, and the last thing we need is another sushi restaurant. We are pretty much inundated with them in the many small strip malls in our bedroom community. There are five sushi places just two minutes from my house—walking distance, even—and yes, I’ve tried them all.

I know this because it was recorded on my Instagram as a milestone in my single-parent life; It was the second time my then-one-year-old son, Nolan, spent part of his first few hours at a new place called “daycare” as he was about to start his new full-time job .

I’m no stranger to going for sushi myself – in fact, it might even be my favorite way. Years ago, in my “old life” in Los Angeles, I would often take a break from my work-at-home gig with a local media site, walk the two blocks to my neighborhood sushi place, grab a seat and just have dinner When my son was alone for lunch for the first time in 13 months, it was no surprise that I went in search of sushi.
Mt. Fuji is a small restaurant, with four seats at the sushi bar and another few dozen at the tables. The walls are beautiful pictures of the Japan I’m learning from, taken by Hwu’s talented son. Small novelty figures like mini Darth Vaders and Spider-Man and sumo wrestler bobble heads are displayed everywhere, which also come to mesmerize my son.

Every sushi place in my neighborhood has something special about them that has created its own loyal following. I admit it took a while for me and my soon-to-be sushi-loving son to settle on Mount Fuji as our place. But I went out after a night of ordering to make myself a Mt Fuji loyalist and find out what is so special about Mt Fuji that keeps people coming back.
One of those times when I was “hungry” on a night out would lead to things unraveling. It’s always busy on Mt Fuji at dinner time, and we drove to the ‘burbs fresh from my daycare after my workday in Vancouver, and we were both hungry and tired. We placed our order, but it soon became clear that the restaurant was understaffed and things were getting backed up. Minutes passed, and we got nothing from the kitchen or the sushi bar, and it must have been in the 40 minute zone, when I could have sworn what was served at the table that sat several minutes after us. I took one look at my tired, hungry child and decided we were done. From where Michael was at the sushi counter, I knew I could see the panic in his eyes, but I had to make my kids some dinner for bedtime. He must have apologized to her and I know I emphatically explained that I couldn’t wait any longer.
